ABOUT THE CSA

Our chicken CSA (Community Supported Agriculture) is a program in which people can purchase a share of our farm's production of chickens. The CSA members receive a monthly batch of fresh chickens. The chickens are pasture-raised, exceed organic standards, and the members can choose from a variety of cut options. The CSA also provides members with an opportunity to learn about our regenerative farm practices and elevates your meals beyond what factory farmed chicken could ever dream of.

The CSA is an opportunity to support our farm, as well as a way for members to get fresh, high quality chicken at a reduced cost. We've had a great time getting to know our members and have received wonderful feedback about the program. We're really excited to start this year's round of chickens and look forward to another successful season!

JUST HOW FRESH IS THE CHICKEN?

WEDNESDAYS

We process our chickens on farm every Wednesday. They are then chilled overnight.

THURSDAYS

After a night of letting the meat rest and chill, we part out and package your chicken. We then store them in a cooler overnight to rest more. The resting periods help ensure rigor mortis has passed and the meat becomes more tender.

FRIDAYS

Orders are packed in the morning and ready for farm pickups later in the day.

SATURDAYS

If you choose to pickup at a farmers market, we have your CSA packed and ready for pickup at your choice of Greensburg Farmers Market or Ligonier Country Market.

The best chicken we've ever had, hands down! You cannot go back to eating store bought chicken after you try it!

HOW IT WORKS

All CSA's go from May through October, that's 6 months. With one CSA share you will be purchasing 24 chickens in total and they will be divided up into 6 batches. One batch for each month of your CSA. This means in each of your batches, you will receive 4 chickens. 

You can customize those chickens to your liking with cut options if you would like. This will give you all those familar cuts such as boneless breasts, thighs, wings, tenderloins and more! Your cuts can be customized with a variety of options.

Each of those chickens we try to target between 4 to 4.5 lbs each. Typically the start and end of the season, they may be slightly smaller.

You can also do a half share as well, so each batch you will receive 2 chickens. More on that below.

CUT OPTIONS

In each of your batches, if you choose a full share you will receive 4 chickens, and a half share you will receive 2 chickens. You can customize those chickens to your liking. You can choose to keep them as whole oven ready chickens, or have us cut them into halves or a spatchcock cut. Alternatively, you may like all those popular cuts, such as breasts, tenderloins, wings and legs. For this you would choose to part out your chickens.

WHOLE CHICKENS

Leave your chickens as whole chickens. These will be oven ready chickens for you to cook however you desire.

Half CHICKENS

Choosing this option when you order will tell us to cut your chickens into halves. So each chicken will yield 2 halves. You can choose how many chickens per batch you want cut into halves.

SPATCHCOCK CHICKENS

Have some or all of your chickens spatchcocked. This is when we cut down the backbone, allowing the chicken to be split open and lay flat. This is ideal if you want to cook a whole chicken on the grill.

PART OUT

This option will part out all your chickens. For a full share, in each monthly batch you will receive:
- 4 packs of breast
- 1 eight pack of tenderloins
- 1 eight pack of full wings or 1 sixteen pack of wingdings
- 4 sets of leg quarters. The leg quarters will have various options which are explained below.

LEG QUARTER CUT OPTIONS

If you choose to have your chickens parted out, you have multiple choices for your leg quarters. We can leave them as full leg quarters, split them into drumsticks and thighs, opt for boneless skinless thighs, or we can grind the meat for ground chicken or chicken sausage. You can mix and match any of these options.

Full Leg Quarters

Full leg quarters are the thigh and drumstick still attached as one piece.

THIGHS & DRUMSTICKS

This will divide your leg quarters into drumsticks and thighs. Each set of leg quarters will yield 2 drumsticks and 2 thighs.

BONELESS SKINLESS THIGHS & DRUMSTICKS

Much like the drumstick and thigh option, but we take it one step further. Your thighs are deboned and deskinned, leaving you with boneless skinless thighs! Each set of legs will yield 2 drumsticks and 2 boneless skinless thighs.

GROUND CHICKEN

With this option, we will take the meat from your leg quarters and turn it into ground chicken! One set of leg quarters will yield approximately one pound of ground meat. Sometimes it is slightly under one pound.

CHICKEN SAUSAGE

Use your leg quarters for some of the best chicken sausage! Our sausage is only seasoned with 3 simple ingredients; Himalayan Pink Salt, Organic Black Pepper & Organic Sage! That's it! Simple and healthy ingredients! One set of leg quarters will yield approximately one pound of loose sausage. Sometimes it is slightly under one pound.

MIX AND MATCH YOUR LEG QUARTER OPTIONS

With a full share, each month (or batch) you will receive 4 chickens, which means 4 sets of leg quarters to customize as you choose. A half share will give you 2 leg quarters to customize as you choose. For example, a full share you can have 1 set as leg quarters, 2 sets as drumsticks and thighs and 1 set turned into chicken sausage. Feel free to mix and match your options!

FULL WINGS

Whole pasture raised chicken wings! In a full share you will get a pack of 8 full wings in each of your 6 batches. In a half share you will receive a pack of 4 full wings in each of your 6 batches.

Wingdings are a full wing separated into drums and flats. This is typically the cut you see when you order bone in wings at a restaurant. In a full share you will get a pack of 16 wingdings in each of your 6 batches. In a half share you will receive a pack of 8 wingdings in each of your 6 batches.

EXTRA DISCOUNTS FOR MEMBERS

If you want to buy more chicken in addition to what is already included in your CSA, you will receieve these discounts.

PAYMENT OPTIONS

Deposits are due by March 1st. You may pay in full or pay 50% by March 1st and the remaining balance then goes on a payment plan. The payment plan will take any remaining balance after your deposit is paid and split that over 6 months. Those payments will come out the 1st of every month from May through October.

PICKUPS & DELIVERY

You will be able to pick up your shares at the farm, at Greensburg Farmers Market on Saturday mornings, at Ligonier Farmers Market on Saturday mornings, or have us deliver. Delivery fees may apply.
  
With each batch, you will receive email notifications that your chicken is ready. Simply reply to that email which pickup/delivery option you would like.

PICK UP AT THE FARM

Pick up your share at the farm. Pickups will be done on Fridays from noon to 7pm.

PICK UP AT GREENSBURG FARMERS MARKET

You can pick up your chicken at Greensburg Famers Market held at All Saints Brewing Company on Saturday mornings from 9am until noon.

PICK UP AT LIGONIER COUNTRY MARKET

You can pick up your chicken at Ligonier Country Market held at 110 Andi Lane Ligonier, PA on Saturday mornings from 8am until noon.
